Dang Coconut Chips

Coconut is one of my favorite things in the world, so you can imagine my excitement when I discovered Dang Coconut Chips at Whole Foods yesterday. The story from the founder goes like this:

Dang is named after my mother, who grew up eating food from some of the best chefs in the world: Bangkok’s street vendors. One day, she passed on her recipe for Thai Lettuce Wraps just like she used to have as a college student. I found myself involuntarily snacking on one of the ingredients - Toasted Coconut. It had a strong, sweet aroma and a very satisfying crunch. I immediately called my family, who have been importing goods to the US for more than 30 years, and with that, our company was born.

And I'm so glad it was. These things are amazing. I ate them straight out of the bag, but I can imagine they'd be great mixed with cereal, yogurt or even in a salad. Get them on Amazon.

Last-Minute Gift: Homemade Peppermint Bark

You can't go wrong giving homemade goodies for Christmas. Here's one of my favorite recipes for Peppermint Bark, courtesy of Joy of Baking - it's quick, easy and super delicious.

Ingredients
6 ounces semi sweet chocolate, coarsely chopped
2 teaspoons vegetable oil
6 ounces white chocolate, coarsely chopped
1/3 - 1/2 cup crushed candy

Directions
Line the bottom and sides of an 8 inch (20 cm) square baking pan with aluminum foil, smoothing out any wrinkles.

Melt the semi sweet chocolate with 1 teaspoon of vegetable oil in a heatproof bowl placed over a saucepan of simmering water. Immediately pour the melted chocolate into the prepared pan and tilt the pan so the chocolate makes an even layer.

Place in the refrigerator for about 30 minutes, or until the chocolate has set.

Then melt the white chocolate with the remaining 1 teaspoon of vegetable oil in a heatproof bowl placed over a saucepan of simmering water. Immediately pour the melted white chocolate over the dark chocolate and tilt the pan so the chocolate is in an even layer. Sprinkle the crushed candy canes evenly over the white chocolate. Place in the refrigerator for about 30 minutes, or until the chocolate has set.

Remove the Peppermint Bark from the pan by lifting the edges of the aluminum foil. Peel back the foil and break, or cut, the bark into small irregular pieces. Store in an airtight container in the refrigerator for up to two weeks.

Makes about 25 pieces. Preparation time 45 minutes.
